Spice up potato wedges with quick and delicious taco seasoning mix for a flavorful dish ready in just 30 minutes.
Ingredients:
  • 4 medium russet or Idaho baking potatoes (about 1 1/3 lb)
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 3 tablespoons cornmeal
  • 1/4 cup olive or vegetable oil
  • Salsa, if desired
Instructions:
  • Preheat oven to 450°F. Use a fork to pierce potatoes, then place them on a microwavable paper towel or roasting rack in the microwave. Microwave on High for 6 to 8 minutes, flipping halfway through, until potatoes are almost tender.
  • Combine taco seasoning mix and cornmeal in a large resealable plastic bag.
  • Cut the cooked potatoes lengthwise into quarters and place them in a large shallow dish. Drizzle with oil and toss to coat evenly. Using a large slotted spoon, transfer the potatoes to a plastic bag containing the seasoning mixture, then shake well to coat. Arrange the seasoned potatoes on an ungreased cookie sheet. Enjoy!
  • Bake until golden brown and tender, approximately 8 minutes. Serve with salsa.
