Taco Cheesy Tots and Hot Dog Casserole

Kid-friendly favorite combining hot dogs and tater tots for a quick, tasty meal from Betty Crocker Make It In One cookbook.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 large onion, chopped (1 cup)
  • 1 package (1 oz) Old El Paso™ 25% Less Sodium taco seasoning mix
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes with green chiles, undrained
  • 3 hot dogs, cut in half lengthwise then crosswise into 1/2-inch pieces
  • 1 can (10 1/2 oz) condensed cream of onion soup
  • 1 package (8 oz) shredded Mexican cheese blend
  • 1 package (28 oz) frozen miniature potato nuggets
  • Chopped cilantro and sliced green onions, if desired
Instructions:
  • Preheat your oven to 350°F. Grease a 13×9-inch (3-quart) glass baking dish with cooking spray. In a 12-inch nonstick skillet, brown the beef and onion over medium-high heat for 7 to 9 minutes until cooked through, then drain any excess grease. Lower the heat to medium.
  • Combine 2 tablespoons of taco seasoning mix, tomatoes, and hot dogs in the pan. Cook and stir until everything is heated through. Then, mix in soup and 1 cup of shredded cheese until melted.
  • Spread half of the frozen potatoes in an even layer at the bottom of the baking dish, then spoon the beef mixture over them. In a large resealable plastic bag, toss the remaining potatoes with the rest of the taco seasoning until coated. Place the seasoned potatoes on top of the casserole, discarding any extra taco seasoning left in the bag.
  • After baking uncovered for 40 minutes, sprinkle the remaining 1 cup of cheese on top of the casserole and bake for an additional 3 to 5 minutes until the cheese is melted and the potatoes are lightly browned. Finish by topping with cilantro and green onions.
