Crispy tater tot taco cups loaded with toppings - perfect appetizer or meal with rice and beans.
Ingredients:
  • 16 ounces golden tater tots, such as Ore-Ida® Golden Tater Tots (60 tots)
  • 8 ounces lean ground beef
  • 1/2 (1 ounce) envelope taco seasoning
  • 1/2 cup shredded Cheddar cheese
  • 1/4 cup shredded lettuce
  • 1/4 cup salsa, or to taste
  • 1/4 cup sour cream, or to taste
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C), then lightly grease a standard muffin pan with nonstick cooking spray. Fill each of the 12 cups with 5 tater tots.
  • Bake tots in the preheated oven for 10 minutes. Remove from the oven and press tater tots down into the bottom and sides of each cup using a tamper or the bottom of a small glass to create tater tot cups. Return to the oven and bake for an additional 10 minutes.
  • Heat a large skillet over medium-high heat. Brown ground beef with taco seasoning, stirring frequently, until crumbly, for about 5 to 7 minutes. Drain any excess grease.
  • Distribute the ground beef evenly among the cups, then sprinkle with shredded cheese.
  • Place the muffin pan back in the oven until the cheese is melted, approximately 5 minutes. Transfer to a wire rack and let cool for 3 minutes. Garnish with lettuce, salsa, and sour cream before serving hot.
