Bacon and cheese stuffed tater tot casserole with sour cream and shallots - perfect for tailgating!
Ingredients:
  • 1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
  • 2 tablespoons butter
  • 1 shallot, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 2 tablespoons sour cream
  • 1 pinch ground black pepper
  • 1 pinch nutmeg
  • 1.5 cups shredded sharp Cheddar cheese, divided
  • 3 green onions, sliced
  • 2 tablespoons sour cream, or to taste
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • Arrange the potato nuggets in a perfectly even layer on a baking sheet.
  • Bake until golden brown, around 20-25 minutes in the preheated oven.
  • Heat a large skillet over medium-high heat. Cook bacon until evenly browned, about 10 minutes. Drain on a paper towel-lined plate, chop coarsely, and set aside.
  • Create a luscious sauce by melting butter in a saucepan over medium heat. Sauté shallot in the fragrant butter, then add flour and cook until light golden. Whisk in milk and sour cream until smooth and thick. Season with black pepper and nutmeg, then melt in 1 cup of Cheddar cheese until creamy.
  • In a 9x13-inch baking dish, layer the potato nuggets, sprinkle with bacon, pour over the cheese sauce, and top with the remaining 1/2 cup of Cheddar cheese.
  • Place in the preheated oven until the cheese is perfectly melted, for about 7 minutes. Top with fresh green onions and a dollop of sour cream before serving.
