Nutty Mexican wedding cookies rolled in powdered sugar, perfect for gifting and celebrations.
Ingredients:
  • 1 cup unsalted butter, softened
  • 2 teaspoons water
  • 2 cups all-purpose flour
  • 1 cup finely chopped almonds
  • 0.5 cup powdered sugar, or more as needed
Instructions:
  • In a medium bowl, use an electric mixer to whip the butter and sugar together until light and fluffy. Blend in the vanilla and water. Add the flour, almonds, and salt, then mix on low speed until the dough just comes together. Cover and refrigerate for 1 to 3 hours.
  • Preheat the oven to 325°F (165°C) for a perfectly baked dish.
  • Roll the chilled dough into 1-inch balls and arrange them 2 inches apart on ungreased cookie sheets.
  • Transfer cookies from the preheated oven to wire racks to cool for 20 to 30 minutes.
  • In a shallow bowl, add powdered sugar. Roll cooled cookies in powdered sugar until coated. Place in an airtight container and store at room temperature.
