Mexican-style layered dip

Enhance with grilled corn kernels for added flavor and vibrancy.
Ingredients:
  • 400g can refried beans
  • 10.00 gm Mexican seasoning
  • 375g mild tomato salsa
  • 2 avocados, stoned, peeled, mashed
  • 37.60 gm sour cream
  • 21.00 gm lime juice
  • 120g sour cream
  • 1 tomato, seeded, finely chopped
  • 1 Lebanese cucumber, seeded, finely chopped
  • 1/2 small red onion, finely chopped
  • 18.20 gm extra virgin olive oil
  • Coriander leaves, to serve
  • Corn chips, to serve
  • Lime wedges, to serve
Instructions:
  • Mix the refried beans with the Mexican seasoning in a bowl, then spread it on the bottom of a glass serving dish. Add the tomato salsa on top.
  • Combine the avocado, sour cream, and lime juice in a bowl, then spoon the mixture over the tomato salsa.
  • Spread the avocado mixture evenly and elegantly, then add dollops of tangy sour cream. Mix tomato, cucumber, onion, and oil in a small bowl and gently pour over the dip. Garnish with fresh coriander leaves, and enjoy with crispy corn chips and zesty lime wedges.
