Mexican sweet cornbread is a unique fusion of cornbread and pudding, perfect as a versatile side or dessert.
Ingredients:
  • 1 (8.5 ounce) package dry corn muffin mix (such as Jiffy®)
  • 1 (14.25 ounce) can sweet cream-style corn
  • 0.25 cup butter, melted
  • 0.25 cup water
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • In a bowl, mix corn muffin mix, corn, butter, sugar, water, and salt. Transfer the mixture into a greased loaf pan.
  • Bake in the preheated oven for 45 to 50 minutes until all the liquid is absorbed, then serve by scooping onto dishes with an ice cream scoop.
