Michela’s mango, spinach & pine nuts (no cook)

Ingredients:
  • 1 large handful of baby spinach
  • 1 tablespoon pine nuts
  • ½ a ripe mango
  • 2 tablespoons Greek yoghurt
Instructions:
  • Dice the mango into small, bite-sized pieces, removing the skin, and transfer them to a blender or a bowl. Combine with yogurt, spinach, and pine nuts. Adjust the texture by pureeing, pulsing, mashing, or chopping, depending on your child's age and eating stage. If the consistency is too thick, mix in a splash of water to thin it out. Enjoy right away or store in the refrigerator for later.
