World's fastest nachos cooked in 3 minutes. Microwave corn chips for crispness. Melt cheese for 1 minute, or up to 3 for golden patches. Creamy texture from cottage cheese replicates queso fresco.
Ingredients:
  • 100g cottage cheese
  • 120g corn chips
  • 70g (½ cup) frozen corn, thawed
  • 1 green shallot (spring onion), thinly sliced
  • 155g (1 1/2 cups) pre-grated 3 cheese blend
  • 1 avocado, mashed
  • Sriracha chilli sauce or sweet chilli sauce, to serve
Instructions:
  • Rinse cottage cheese under cold water in a sieve and let it drain well.
  • Line a microwave-safe plate with baking paper and place the corn chips on top. Sprinkle with the corn, shallot, and cheese blend. Microwave for 1-3 minutes until the cheese is melted.
  • To serve, layer on cottage cheese and avocado, then drizzle with chili sauce.
