Savor the flavor of stovetop-made loaded beef nachos with homemade taco seasoning and tomato-chile refried beans, finished in the microwave for a quick and delicious meal.
Ingredients:
  • 5 teaspoons paprika
  • 1 1/4 teaspoons garlic powder
  • 1 1/4 teaspoons ground cumin
  • 1 1/4 teaspoons onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon oregano leaves
  • 1 1/2 teaspoons salt
Instructions:
  • Combine paprika, garlic powder, cumin, onion powder, chili powder, oregano, and salt in a small bowl.
  • In a large skillet over medium-high heat, sizzle beef in hot oil until golden and crumbly, about 5-7 minutes. Add onion and green pepper, continue cooking until most liquid evaporates, for about 2 minutes.
  • Combine 1/2 can of diced tomatoes with chilies and Mexican-style corn in a skillet. Season the beef mixture to taste with prepared taco seasoning mix.
  • Combine the remaining 1/2 can of diced tomatoes with chilies and refried beans in a microwave-safe bowl. Microwave on High, stirring every 30 seconds, until heated through, about 1 to 3 minutes.
  • Spread a layer of half the tortilla chips on a microwave-safe plate. Spoon refried beans, meat mixture, and shredded cheese over the chips. Create a second layer using the remaining ingredients.
  • Microwave on High for 2 to 3 minutes until the cheese is melted and the nachos are warm. Garnish with sour cream, salsa, olives, jalapenos, and green onion to taste.
