Ingredients:
  • 3 tablespoons quick-cooking grits
  • 0.75 cup water
  • 0.5 teaspoon kosher salt, divided
  • 1 tablespoon unsalted butter
  • 0.25 cup corn kernels
  • 2 tablespoons shredded whole-milk mozzarella cheese
  • 0.5 teaspoon sugar
  • 1 tablespoon Japanese mayonnaise (such as Kewpie®)
  • freshly cracked black pepper
  • 1 tablespoon whole milk, or more as needed
  • 1 scallion (dark part only), thinly sliced
Instructions:
  • Prepare all your scrumptious ingredients for a culinary adventure.
  • Add grits, water, and ¼ teaspoon of kosher salt to a 12-ounce microwave-safe mug. Mix well using a fork or whisk, place on a microwave-safe plate to catch any overflow, and microwave on high for 1 ½ minutes. Take out from the microwave when done.
  • Next, incorporate 1 tablespoon of unsalted butter and gently mix. Microwave for an additional 1 ½ to 2 minutes until the grits reach desired tenderness. Adjust seasoning to taste.
  • Combine the corn, mozzarella cheese, sugar, Kewpie mayonnaise, remaining ¼ teaspoon of kosher salt, and desired amount of freshly cracked black pepper in a small bowl.
  • Take the grits out of the microwave and stir in 1 tablespoon of whole milk. Adjust the consistency by adding more milk gradually until it reaches your preferred thickness.
  • Microwave the corn cheese mixture on high power for 45 seconds, without stirring, until the cheese is fully melted on top.
  • Thoroughly combine the corn cheese with the grits, then garnish with sliced scallions. Capture a perfect cheese pull for your photo and savor the dish!
