Microwave rice loaf

Ingredients:
  • 200.00 gm white long-grain rice, rinsed
  • 500.00 gm cold water
  • 375.00 ml grated tasty cheese
  • 310g can corn kernels, drained
  • 100g shaved leg ham
  • Watercress, to serve
  • Mayonnaise, to serve
Instructions:
  • Prepare your loaf pan by greasing and lining it with baking paper, ensuring there is a 5cm overhang at the long ends. The pan should be microwave-safe and measure 7.5cm deep and 10cm x 19cm at the base.
  • In a microwave-safe bowl, combine rice and water. Cover and cook on HIGH power for 5 minutes, then on MEDIUM power for 7 minutes. Let it stand for 3 minutes before serving.
  • In a bowl, mix together 1 cup of cheese, onions, corn, eggs, salt, and pepper. Add rice to the mixture and stir until combined. Press half of the mixture into a prepared pan. Sprinkle with 1/4 cup of cheese, then layer with ham, and sprinkle another 1/4 cup of cheese. Top with the remaining rice mixture and press it evenly over the cheese.
  • Place on a microwave-safe rack and cook for 20 minutes on MEDIUM power until firm. Let it stand for 10 minutes, then serve with watercress and mayonnaise.
