- 0.33333334326744 cup light corn syrup (such as Karo®)
- 2 egg whites
- 1 teaspoon vanilla extract
- Combine sugar, corn syrup, and water in a microwave-safe bowl.
- Microwave sugar mixture until it reaches 250 degrees F (120 degrees C), or forms a rigid ball in cold water, approximately 3 minutes.
- Whisk egg whites in a glass or metal bowl until stiff peaks form. Peaks should stand straight up when the whisk is lifted.
- Blend the sugar mixture into the egg whites until the glossy sheen disappears, which should take about 7 minutes. Then, gently mix in the vanilla extract.
- Spoon small dollops of candy onto waxed paper. Allow to cool for 15 minutes.
