Quick and delicious microwave Oyakodon, a comforting Japanese dish ready in 10 minutes.
Ingredients:
  • 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 small yellow onion, thinly sliced (about 2 cups)
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce (see Recipe Note)
  • 3 tablespoons mirin
  • 1 teaspoon sugar
  • 1/2 teaspoon kosher salt, divided
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/2 cup low-sodium chicken stock (see Recipe Note)
  • Cooked rice, for serving
  • Kimchi, for serving
Instructions:
  • Infuse flavor into the chicken: Place the chicken, onions, garlic, soy sauce, mirin, sugar, 1/4 teaspoon kosher salt, and black pepper in an 8x8-inch glass baking dish. Stir generously with a large spoon to coat evenly.
  • Cover the dish tightly with plastic wrap, poking a few holes on top. Microwave on high power for 7 minutes. Check the center of a larger piece of chicken for doneness - it should not be pink. If needed, microwave for an additional 2 minutes.
  • Whisk the eggs until you see some separation between the yolk and whites, then add 1/4 teaspoon kosher salt and chicken stock in a medium bowl. Set aside while the chicken microwaves.
  • Microwave the eggs: Remove the baking dish from the microwave and carefully peel back the plastic wrap. Be cautious as it will be hot. Stir the chicken, distribute it evenly, pour the eggs on top without mixing, and cover tightly with the plastic wrap. Microwave on high for 2 minutes. Check for doneness. If needed, gently push any raw eggs towards the edges using a spoon, then continue microwaving in 1-minute intervals until fully cooked, adjusting for your microwave's wattage.
  • Serve the flavorful oyakodon generously over a bed of steamed rice along with a side of tangy kimchi. Remember to scoop up and savor every bit of the delicious broth. Store any remaining portions tightly covered in the refrigerator for up to 2 days. To enjoy again, simply reheat in the microwave in 1-minute increments until warmed throughout.
