Microwave quiche in a cup

Whip up a gourmet ham, broccoli, and cheese microwave quiche in less than 3 minutes!
Ingredients:
  • 2 Aussie Free Range Eggs
  • 40g (1/4 cup) self-raising flour
  • 50g (3/4 cup) blanched broccoli, coarsely chopped
  • 30g (1/3 cup) sliced ham, torn
  • 1 green shallot, thinly sliced
  • 40.00 ml shredded parmesan
  • 20.00 ml coarsely grated cheddar, plus extra, to sprinkle
  • 20.00 ml chopped fresh continental parsley
  • 1 cherry tomato, halved
Instructions:
  • In a spacious bowl, gently crack the eggs. Add the flour, then vigorously whisk until smoothly blended.
  • Combine the broccoli, ham, shallot, Parmesan, cheddar, and parsley, stirring until evenly mixed. Spoon the mixture into a microwave-safe cup or mug that holds 250ml (1 cup). Gently press the tomato, cut side up, into the top of the mixture, and finish off with a sprinkle of extra grated cheddar.
  • Microwave on High (800 watts) for 2 1/2 minutes until the quiche is puffed and the egg is set.
