Microwave saffron pilaf

Whip up this flavorful rice dish effortlessly.
Ingredients:
  • 20.00 gm butter
  • 1 brown onion, finely chopped
  • 200.00 gm Basmati rice
  • 510.00 gm salt reduced chicken style liquid stock
  • 1/2 tsp saffron threads
  • 125.00 ml roasted salted cashew nuts
  • 62.50 ml currants
  • Thick Greek-style natural yoghurt, to serve
  • 1 green onion, diagonally sliced, to serve
Instructions:
  • In a 2-liter microwave-safe bowl, combine oil, butter, onion, and garlic. Microwave on HIGH for 3 minutes, or until onion is tender.
  • Combine rice, stock, and saffron in a microwave-safe dish. Cover tightly with a lid or double layer of plastic wrap. Microwave on MEDIUM (50%) power for 15 minutes or until the rice has absorbed the stock.
  • Combine the cashew nuts, currants, salt, and pepper, stirring until evenly mixed.
