Indulge in a comforting scone topped with fresh strawberry preserve and creamy goodness for a timeless tea time delight.
Ingredients:
  • 335g (1 1/2 cups) white sugar
  • 2 x 250g punnets strawberries, washed, hulled, quartered
  • 250ml (1 cup) water
  • 1 lemon, halved, juiced, halves reserved
Instructions:
  • In a large microwave-safe bowl, heat the sugar on High for 4-5 minutes until warm.
  • In a large microwave-safe bowl, combine the strawberries, water, lemon juice, and 1 reserved lemon half. Microwave on High for 5 minutes or until the strawberries are soft but still slightly chunky.
  • Combine warm sugar with the fruit mixture, stirring until thoroughly mixed. Cook on High/800watts/100% for 20-25 minutes until the jam sets. Let it rest for 3 minutes until bubbles disappear.
  • Pour the hot jam into jars using a funnel, seal them, then flip them over for 2 minutes before setting upright. Let them cool, label, date, and store in a cool, dark place away from sunlight until needed.
