Quick and vibrant homemade microwave Turkish delight beats the store-bought version!
Ingredients:
  • 37.50 gm powdered gelatine
  • 430.00 gm caster sugar
  • 97.50 gm cornflour
  • 199.50 gm icing sugar mixture
  • 0.63 gm cream of tartar
  • 1/2 tsp rosewater
  • 1 to 2 drops red food colouring
  • 125.00 ml pistachio kernels, roughly chopped
  • 75g milk chocolate, chopped
Instructions:
  • Prepare a slice pan by gently greasing it and lining the base and sides with baking paper, leaving a 2cm overhang at both long ends.
  • - In a large heatproof, microwave-safe bowl, pour 2 1/2 cups of hot water. - Sprinkle gelatine over the water and whisk with a fork until dissolved. - Stir in caster sugar and microwave on high (100%) for 5 minutes. - Stir well and microwave for an additional 4 to 5 minutes until thick and syrupy.
  • Combine cornflour, icing sugar, and cream of tartar with the gelatine mixture, whisking until smooth. Microwave the mixture on high for 3 minutes. Add rosewater, food coloring, and pistachios, stirring well. Transfer the mixture to a prepared pan and chill until set.
  • Take out the Turkish delight from the pan. Cut it into 3cm squares using a hot knife and transfer the squares to a fresh sheet of baking paper.
  • 1. Place chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring each time, until melted and smooth. 2. Transfer melted chocolate into a ziplock bag, snip off a corner, then pipe over squares. 3. Allow chocolate to set at room temperature before serving.
