Vibrant veggie pizzas with hummus, spinach, and tomato toppings.
Ingredients:
  • 4 pita breads (6 inches in diameter)
  • 1/2 cup roasted garlic-flavored or regular hummus
  • 1 cup crumbled feta cheese (4 ounces)
  • 1 small onion, sliced
  • 2 cups shredded spinach
  • 1 large tomato, seeded and chopped (1 cup)
  • 1/4 cup sliced ripe or Kalamata olives
Instructions:
  • Preheat oven to 400°F and place pita breads on an ungreased jelly roll pan measuring 15 1/2x10 1/2x1 inch.
  • Evenly coat each pita bread with creamy hummus and generously sprinkle with flavorful cheese.
  • Bake the pizzas for 8 to 10 minutes until the cheese is gooey and delicious, then sprinkle with a colorful mix of onion, spinach, tomato, and olives.
