Midnight Molten Brownie Cupcakes

Decadent chocolate cupcakes that are irresistibly rich and gooey, perfect for chocolate enthusiasts.
Ingredients:
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup butter or margarine
  • 3 eggs
  • 3 egg yolks
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • About 1/2 cup Betty Crocker™ stars, confetti or critters decors, if desired
Instructions:
  • Preheat the oven to 400°F. Thoroughly grease a 12-cup muffin tin (2 3/4x1 1/4 inches). In a medium microwave-safe bowl, microwave the chocolate chips and butter uncovered on High for 45 to 60 seconds, or until melted and smooth when mixed.
  • Combine eggs and egg yolks in a large bowl, whisking or using an electric mixer until foamy. Set aside the chocolate syrup pouch from the brownie mix. Gradually mix the dry brownie mix into the egg mixture until well combined. Carefully fold in the melted chocolate mixture. Fill muffin cups halfway with the brownie mixture, sprinkle each with 1/2 teaspoon of decors, then top with the remaining brownie mixture.
  • Bake for 10 to 12 minutes until edges are firm and internal temperature reaches 160°F. Avoid overbaking - centers should remain soft. Let cool for 2 minutes before enjoying.
  • Gently remove each cupcake from the pan using a knife and flip them onto a heatproof tray or cookie sheet. When serving, place the cupcake on a plate, drizzle with the remaining chocolate syrup, and add extra decorations on top.
