Get Martha Stewart's spooky midnight moon cookies for a fun Halloween treat!
Ingredients:
  • 562.50 ml plain flour
  • 3.00 gm baking powder
  • 1.80 gm sea salt flakes
  • 125g unsalted butter, softened
  • 141.90 gm caster sugar
  • 2 eggs
  • 2.20 gm vanilla extract
  • 128.75 gm milk
  • 250g 70% cocoa dark chocolate, melted
  • 250g pure icing sugar
  • 40.00 gm boiling water
  • 15g unsalted butter, softened
Instructions:
  • Prepare to bake cookies: Heat the oven to 180°C/160°C fan-forced. Grease 2 large baking trays and line them with baking paper. In a bowl, sift together flour, baking powder, and salt. Using an electric mixer, cream butter and sugar on high speed for 3 minutes until light and fluffy. Reduce the speed to medium, and add eggs one at a time, mixing well after each addition. Stir in vanilla until blended. With the mixer on low, add half of the flour mixture and mix until just combined. Mix in the milk, then add the remaining flour mixture and beat until thoroughly combined.
  • - Spoon mixture into a piping bag with a 1.5cm plain nozzle. Pipe 10 rounds, each 1cm thick and 9cm wide, onto a prepared tray, spacing them 4cm apart. Bake for 9 to 10 minutes until firm. Let cool for 5 minutes, then transfer to a wire rack to cool completely.
  • Create delicious chocolate cats by printing 10 cat templates and attaching them to a large tray with tape. Cover the templates with a sheet of baking paper, securing it with tape. Fill a snap-lock bag with melted chocolate and cut off a 1mm corner. Pipe chocolate over the paper using the templates as a reference. Use a toothpick to create a furry effect on the chocolate. Freeze until solid.
  • To make the icing, sift icing sugar into a large bowl. Gradually pour in boiling water while whisking until smooth. Then, add butter and whisk until smooth.
  • Take the chocolate cats out of the freezer. Carefully peel the paper off each cat and return them to the freezer. Spread a thin layer of icing on the flat side of each cookie. Gently remove the paper from each cat. Using a spatula, place each cat, smooth side up, onto the icing. Repeat with the rest of the cookies, icing, and cats. Allow them to set before serving.
