Irresistible nutty brownies that everyone will adore.
Ingredients:
  • 125g hazelnuts
  • 280g caster sugar
  • 115g plain flour
  • 35g cocoa powder
  • 125g pecans, roughly chopped
  • 200g Milk cooking chocolate, chopped
  • 150g butter
  • 3 eggs
  • Icing sugar, to dust
Instructions:
  • 1. Preheat your oven to 160°C. 2. Line an 18cm x 28cm slab pan with non-stick baking paper. 3. Toast 125g hazelnuts on a baking tray for 8-10 minutes until golden. 4. Peel the hazelnuts by rubbing them in a tea towel, then roughly chop them. 5. In a large bowl, combine 1 1/4 cups (280g) caster sugar, 3/4 cup (115g) plain flour, 1/3 cup (35g) cocoa, 125g roughly chopped pecans, and the chopped hazelnuts.
  • Melt 200g chopped Plaistowe Milk cooking chocolate and 150g butter in a heatproof bowl in the microwave on High, stirring every 30 seconds until smooth.
  • Mix together the melted chocolate, dry ingredients, and 3 eggs until combined. Pour the batter into the pan and bake for 50-55 minutes or until a skewer comes out almost clean. Let it cool completely in the pan before slicing. Dust with icing sugar before serving.
