Millet, parmesan & seed biscuits

Sesame seed biscuits with sunflower and poppy seeds. Perfect for a special cheese platter pairing.
Ingredients:
  • 250g millet meal*
  • 2.00 gm baking powder
  • 50g finely grated fresh parmesan
  • 100g cold unsalted butter, chopped
  • 51.50 gm milk
  • 6.00 gm sesame seeds
  • 2 tsp poppy seeds
  • 20.00 ml sunflower seeds
  • Parmesan, to serve
  • Dried fruit, to serve
Instructions:
  • Combine millet, baking powder, cheese, butter, and a large pinch of salt in a food processor until well mixed. While the processor is on, pour in the milk until a dough ball starts to form. Transfer the dough onto a sheet of plastic wrap, shape it into a disc, and refrigerate for 20 minutes.
  • Preheat your oven to 200°C and lightly grease 2 baking trays.
  • Roll out the dough to 3-4mm thickness on a sheet of baking paper. Sprinkle the combined seeds over the dough and gently press them in with the rolling pin. Using a 5cm round pastry cutter, cut out 30 biscuits from the dough and place them on trays. Bake for 12 minutes or until golden brown. Let them cool slightly before transferring to a wire rack to cool completely. Serve with parmesan and dried fruit.
