Create a festive English Christmas filling for mince pies using brandy-infused apples, raisins, almonds, and homemade mixed spice.
Ingredients:
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground allspice
  • 1 large green apple, peeled and finely chopped
  • 1.25 cups sultana raisins
  • 1.125 cups white sugar
  • 0.5 cup dried currants
  • 0.5 cup butter
  • 0.5 cup chopped almonds
  • 1.5 tablespoons grated orange zest
  • 0.5 teaspoon ground cinnamon
  • 1 cup brandy
Instructions:
  • Make mixed spice: Mix cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Set aside 1 heaped teaspoon for the mincemeat. Save the remaining mixture in a small jar for future use.
  • Place two clean, 12-ounce jars in simmering water while preparing the mincemeat. Also, wash the new, unused lids and rings in warm soapy water.
  • To make the mincemeat, simmer a mix of apple, sultanas, sugar, currants, raisins, and butter in a saucepan until the butter melts. Then, add chopped almonds, orange zest, 1 teaspoon mixed spice, and cinnamon. Stir gently.
  • Bring the mixture to a gentle simmer and cook for 5-10 minutes, stirring occasionally.
  • Let mincemeat cool for 30 minutes, then stir in brandy before spooning into sterilized jars.
