Fragrant mincemeat cookies with a spicy and flavorful old-fashioned twist, made with prepared mincemeat pie filling.
Ingredients:
  • 1.5 cups packed brown sugar
  • 1 cup shortening
  • 1 egg
  • 2 cups prepared mincemeat pie filling
  • 3.25 cups all-purpose flour
  • 0.25 teaspoon salt
  • 1.5 teaspoons baking soda
Instructions:
  • Preheat the oven to 425°F (220°C) and lightly grease the cookie sheets.
  • In a large mixing bowl, use an electric mixer to beat together brown sugar and butter until light and fluffy. Add the egg and mix well, then stir in the mincemeat.
  • Combine the flour, salt, and baking soda together, then incorporate them into the mincemeat mixture.
  • Spoon teaspoonfuls of the mixture onto the cookie sheets, spacing them 2 inches apart.
  • Bake until edges turn golden brown, approximately 7 to 10 minutes in the preheated oven.
