Mincemeat Spice Cake

Bake spiced cake, top with mincemeat and oats for a rich dessert.
Ingredients:
  • 0.5 cup butter, softened, plus additional for preparing pan
  • 1.5 cups Pillsbury BEST® All Purpose Flour
  • 0.75 cup sugar
  • 1 cup Crosse & Blackwell® Mincemeat Filling & Topping or Crosse & Blackwell® Rum & Brandy Mincemeat Filling & Topping
  • Grated peel of 1 lemon
  • 1 cup Crosse & Blackwell® Mincemeat Filling & Topping
  • 0.25 cup sugar
  • 0.25 cup rolled oats
Instructions:
  • Preheat oven to 350 degrees F. Line the bottom of a springform cake pan with wax paper and butter the sides for easy release.
  • In a large bowl, combine flour, baking powder, sugar, and 1/2 cup of butter. Add milk, mincemeat, eggs, and lemon peel. Mix with an electric mixer on low speed for 2 minutes until well combined. Pour the batter into the prepared pan.
  • Bake the cake for 30 minutes. Meanwhile, combine all topping ingredients in a small bowl. Remove the cake from the oven and spread the topping over it. Return the cake to the oven and bake for an additional 30 minutes, or until a toothpick inserted in the center comes out clean.
