Mini air-fryer ham and cheese lasagnes

Quick and easy lasagne using just 4 ingredients - sauce, pasta, ham, and mozzarella. Make ahead, air fry, or freeze for later. Swap ham for salami or skip meat. Use dried lasagne sheets for easier crumbing. Chill for 8.5 hours or make ahead for optimal results.
Ingredients:
  • 2 x 500g btl Mum’s Sause Bolognese pasta sauce
  • 9 dried lasagne sheets
  • 150g sliced Virginian leg ham
  • 500g Mozzarella ball, sliced
  • 75g (1 1/2 cups) panko breadcrumbs
  • 60g (3/4 cup) shredded parmesan
  • 2 eggs
Instructions:
  • - Preheat oven to 180C/160C fan forced. - Spread half of the pasta sauce (125ml/1/2 cup) in an 18cm square cake pan. - Place a layer of lasagne sheets, trimming if needed. - Spread another half of the pasta sauce (125ml/1/2 cup) evenly over the lasagne sheets. - Add half of the ham and a third of the mozzarella. - Repeat layering with more lasagne sheets, sauce, remaining ham, and half the remaining mozzarella. - Top with final layer of lasagne sheets, remaining sauce, and mozzarella. - Bake for 40 minutes until golden and cooked through. - Cool for 1 hour, then refrigerate, covered, for 8 hours or overnight to set.
  • In a shallow bowl, mix together the breadcrumbs and Parmesan cheese. In another shallow bowl, whisk the eggs.
  • Prepare a tray by lining it with baking paper. Cut the lasagne into 12 portions. Dip each portion in beaten egg, then coat with breadcrumbs by pressing them gently. Place the coated portions on the tray. Chill in the fridge for 30 minutes.
  • Warm up the leftover pasta sauce in a saucepan over low heat, stirring until heated through. Then, coat the lasagna pieces in breadcrumbs and place them in the air fryer basket. Spray with oil and air fry at 180C for 12 minutes or until golden. Serve with the heated pasta sauce. Enjoy these Mini air-fryer ham and cheese lasagnas!
