Delightful coconut and apple cakes - ideal for a cozy tea gathering with friends!
Ingredients:
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 6.60 gm vanilla extract
  • 250.00 ml plain flour
  • 41.25 gm moist flaked coconut
  • 1 granny smith apple, peeled, cored, finely chopped
  • 225.00 gm icing sugar mixture, sifted
Instructions:
  • Preheat your oven to 180C/160C fan-forced and generously grease a 12-hole, 1/2 cup-capacity oval friand pan.
  • In an electric mixer, whip together butter, sugar, and 1 teaspoon vanilla until fluffy. Beat in eggs one at a time. Sift in flour and baking powder, then mix in milk and 1/2 cup coconut. Gently fold in apple to combine.
  • Fill friand holes halfway with mixture, then level the tops. Bake for 20-25 minutes until a skewer comes out clean when inserted in the center of a cake. Let it sit in the pan for 10 minutes, then carefully transfer onto a wire rack to cool.
  • In a bowl, combine icing sugar and the rest of the vanilla. Pour in 2 tablespoons of hot water and stir until smooth. Drizzle over cakes and sprinkle with the rest of the coconut. Allow to set before serving.
