Delicious mini banana bread with oats and raisins, ideal for breakfast or a snack.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.25 cup quick-cooking oats, or to taste
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 4 ripe bananas
  • 0.5 cup brown sugar
  • 0.25 cup margarine
  • 0.25 cup milk
  • 0.5 cup raisins, or to taste
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • In a medium bowl, mix together the flours, oats, baking soda, cinnamon, and salt. Mash the bananas into the dry ingredients.
  • In a large bowl, blend sugars and margarine until creamy using an electric mixer. Stir in milk and vanilla extract. Mix in the flour mixture and raisins until well combined. Divide batter into 4 mini silicone loaf pans and place them on a baking sheet.
  • Bake in the oven until a toothpick comes out clean when inserted in the center, about 25-30 minutes.
