Mini Banana Breads

Irresistible mini banana bread for easy gifting.
Ingredients:
  • 1 1/4 cups sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 1 1/2 cups mashed ripe bananas (3 to 4 medium)
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped nuts, if desired
Instructions:
  • Preheat oven to 350°F and lightly grease only the bottoms of 10 (4 1/2x2 1/2x1 1/2-inch) mini loaf pans with shortening or cooking spray.
  • Combine sugar and butter in a large bowl. Mix until creamy. Blend in eggs. Incorporate bananas, buttermilk, and vanilla; mix until smooth. Gently fold in flour, baking soda, and salt until just combined. Add nuts. Divide batter equally among pans, each with approximately 1/2 cup batter.
  • Bake for 30 to 35 minutes until a toothpick comes out clean, then cool for 5 minutes. Remove loaves from pans, let cool completely for about 2 hours. Store wrapped tightly at room temperature for up to 4 days or refrigerate for up to 10 days.
