Excitingly unique mini quick breads infused with flavors of bananas, bacon, and whiskey liqueur.
Ingredients:
  • butter-flavored cooking spray (such as Pam®)
  • 3 very ripe bananas
  • 1 tablespoon vanilla extract
  • 1 tablespoon banana extract
  • 1.5 fluid ounces whiskey and honey liqueur (such as Jack Daniel's Tennessee Honey®)
  • 1 cup butter
  • 2 cups white sugar
  • 3 tablespoons bacon drippings
  • 5 slices cooked bacon
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C, gas mark 3). Grease 5 mini loaf pans with cooking spray.
  • Combine bananas, vanilla extract, banana extract, and whiskey-honey liqueur in the stand mixer bowl and mix thoroughly. Transfer the banana mixture to a separate bowl. In a clean bowl, beat butter, sugar, eggs, and bacon drippings with the stand mixer until the mixture is fluffy for about 3 minutes. Gently stir in the banana mixture into the butter mixture.
  • Finely chop the bacon slices in a food processor. Mix the chopped bacon into the moist ingredients. Combine flour, baking soda, salt, and baking powder on a large paper plate, then use the plate as a funnel to add the mixture to the moist ingredients in the mixer bowl. Beat until batter is well combined. Pour the batter into the prepared mini loaf pans.
  • Bake in the hot oven until a toothpick inserted in the center of the loaf comes out clean or with moist crumbs, approximately 45 minutes.
