Mini beef burgers

Delight picky eaters with homemade juicy beef burgers seasoned with onion, herbs, and cheese. Easy to make, allowing kids to customize their favorite toppings while burgers cook.
Ingredients:
  • olive oil
  • 2 cream crackers
  • 1 medium red onion
  • 20 g Parmesan cheese
  • 4 sprigs of fresh flat-leaf parsley
  • 1 large free-range egg
  • 400 g lean minced beef
  • 8 mini burger buns
  • 4 rashers of higher-welfare smoked streaky bacon
  • 1 soft round lettuce
  • 2 ripe firm tomatoes
  • 1 red onion
  • 1 ripe avocado
  • 30 g Cheddar cheese
Instructions:
  • 1. Preheat the oven to 220ºC/425ºF/gas 7 and lightly grease a baking tray with oil. 2. Place the crackers in a sandwich bag, remove the air, seal it, and have the kids use a rolling pin to crush them into fine crumbs. Transfer the crumbs to a mixing bowl. 3. Coarsely grate the onion and Parmesan using a box grater, then add them to the bowl along with finely chopped parsley. 4. In a separate bowl, let the kids beat the egg with a fork, then add it to the mixture. Season with black pepper and mix well using clean hands. 5. Divide the mixture into 8 equal parts and shape each into a burger about 2cm thick with wet hands. Place the burgers on the prepared tray, pat with a little oil, cover with clingfilm, and chill in the fridge for 30 minutes. 6. For the toppings, grill the bacon until crispy, discard the lettuce outer leaves, wash and dry the inner leaves, slice the tomatoes, onion, and avocado, and grate the Cheddar. 7. Bake the burgers in the preheated oven for 15 minutes or until cooked through. 8. Warm the burger buns in the oven for 2 to 3 minutes, then assemble the burgers with your desired toppings and serve alongside salad or potato wedges.
