Mini Buffalo Chicken Bisquick® Pizzas

Whip up Mini Buffalo Chicken Bisquick Pizzas in 30 minutes. Top with blue cheese and Monterey Jack, bake till gooey.
Ingredients:
  • 1 1/2 cups Original Bisquick™ mix
  • 1/3 cup hot water
  • 1 tablespoon olive oil
  • 1 cup shredded cooked chicken
  • 1/4 cup Frank's™ RedHot™ Buffalo Wings Sauce
  • 1 tablespoon butter, melted
  • 1 cup shredded Monterey Jack cheese (4 oz)
  • 1/2 cup crumbled blue cheese (2 oz)
  • 2 green onions, thinly sliced
Instructions:
  • Preheat oven to 350°F and coat a cookie sheet with cooking spray.
  • Combine Bisquick® mix with hot water and oil in a medium bowl until a dough forms. Transfer the dough onto a work surface (it may be crumbly) and knead until smooth.
  • Divide the dough into 4 equal parts. Shape each part into a 6-inch round and place them on a baking sheet.
  • Bake for 10 minutes, then take the crusts out of the oven and let them cool slightly.
  • Combine chicken, buffalo sauce, and melted butter in a small bowl. Spread Monterey Jack cheese and chicken mixture over baked crusts, then sprinkle with blue cheese.
  • Pop back into the warm oven for an extra 5-7 minutes, or until the cheese is gooey and melted. Sprinkle some fresh green onions on top before serving.
