Festive mini cheeseball pumpkins with caramelized garlic for Thanksgiving or Halloween tables.
Ingredients:
  • 2.5 teaspoons butter
  • 3 tablespoons chopped garlic
  • 1.5 teaspoons white sugar
  • 2 cups shredded aged Cheddar cheese
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup chopped green onions
  • 0.25 teaspoon garlic salt
  • 1 cup finely crushed cheese-flavored crackers (such as Pepperidge Farm® Goldfish)
  • 12 pretzel sticks
  • 1 small bunch fresh parsley, or to taste
Instructions:
  • In a small saucepan, melt butter over medium-high heat until sizzling for about 30 seconds. Stir in garlic and sugar, cooking until garlic begins to brown, stirring constantly for 3 to 5 minutes. Remove from heat and transfer garlic mixture to a bowl. Add Cheddar cheese, cream cheese, green onions, and garlic salt. Beat with an electric mixer on medium speed until creamy. Refrigerate until firm enough to handle, approximately 30 minutes.
  • Form chilled cheese mixture into golf-ball-sized balls, coat in crushed crackers, gently press to slightly flatten the bottom, and top each with half a pretzel stick. Repeat with remaining mixture.
  • Arrange the parsley on a serving plate and elegantly place the mini cheeseball pumpkins on top, ensuring there is space for the vibrant parsley to peek through.
