Delicious mini burgers - perfect for any occasion!
Ingredients:
  • 1 half baguette, ends trimmed
  • 340g lean chicken mince
  • 5.00 gm mild curry powder
  • 2 spring onions, trimmed, finely chopped
  • 20.00 ml chopped fresh continental parsley
  • Olive oil spray
  • 2 light cheddar slices, each cut into 4 triangles
  • 4 small baby cos lettuce leaves
  • 4 pineapple thins in juice, drained
  • 65g (1/4 cup) whole-egg mayonnaise
  • 4 cherry tomatoes
Instructions:
  • Slice the baguette diagonally into 8 pieces and arrange them on a baking tray.
  • In a medium bowl, combine chicken mince, curry powder, spring onions, and parsley. Season with salt and pepper, then mix with your hands until fully incorporated. Divide the mixture into 4 portions and shape each into a patty using wet hands.
  • 1. Preheat a non-stick frying pan over medium heat and lightly spray with oil. 2. Cook the patties for 2-3 minutes on each side until they are golden and fully cooked. 3. Place 2 cheddar triangles on top of each patty, slightly overlapping.
  • Preheat the grill to high heat. Toast the bread until lightly golden. Place 1 slice of toast on a plate and layer with lettuce, pineapple, a chicken patty (with cheddar-side up), and mayonnaise. Top with another slice of toast. Skewer a tomato and insert it into the burger to secure. Repeat with the remaining ingredients to assemble more burgers.
