Indulge in a comforting classic meatloaf paired with buttery crescent rolls for a delightful meal.
Ingredients:
  • 2 lb lean (at least 80%) ground beef
  • 2/3 cup chopped onion
  • 1/2 cup quick-cooking oats
  • 1/2 cup ketchup
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 eggs
  • 1 can (8 oz) refrigerated crescent dinner rolls
  • Chunky style salsa, if desired
Instructions:
  • Preheat the oven to 375°F. In a 10-inch skillet over medium heat, cook ground beef and onion for 8 to 10 minutes until beef is cooked through, stirring occasionally; drain any excess liquid. Add all ingredients except rolls and salsa, and mix well.
  • Take the crescent rolls out of the tube and divide them into 4 rectangles. Flatten each rectangle into an 8x6-inch shape and press them into 1 1/2-cup mini loaf pans. Distribute the beef mixture equally over the dough in each pan and press it down gently.
  • Bake for 24 to 28 minutes until rolls are golden brown. Let cool in the pan for 5 minutes, then invert onto a serving plate. Enjoy the loaves with salsa.
