Mini fairy shortbreads

These fun fairy bread biscuits are perfect for kids and the young at heart at any party!
Ingredients:
  • 300g (2 cups) plain flour
  • 60g (1/3 cup) icing sugar mixture
  • 200g butter, chilled, chopped
  • 60ml (1/4 cup) iced water
  • Hundreds and thousands, to decorate
Instructions:
  • Preheat your oven to 180C/160C fan forced and line 2 baking trays with baking paper. In a food processor, combine flour, icing sugar, butter, and vanilla. Pulse the mixture until it resembles fine breadcrumbs.
  • Pour the chilled water into the mixture and process until it just combines (add more water if needed). Transfer the dough onto a floured surface and gently knead until it's smooth.
  • Roll out the dough to a 7mm-thick rectangle between 2 sheets of baking paper. Cut the dough into 5cm squares using a sharp knife and a ruler as a guide. Sprinkle hundreds and thousands over the dough, then gently press them into the surface using a rolling pin.
  • Place the squares onto the prepared trays. Slice each square in half diagonally and gently separate them. Bake for 15 minutes or until they are golden brown on the bottom and fully cooked. Remove from the oven and let them cool on a wire rack.
