Irresistible, crispy chocolate-coated delight.
Ingredients:
  • 56.10 gm sultanas
  • 62.50 ml red glace cherries, quartered
  • 82.50 ml flaked almonds, toasted
  • 250.00 ml cornflakes
  • 106.43 gm sweetened condensed milk
  • 80g dark chocolate, chopped
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line 2 large baking trays with baking paper.
  • Mix together sultanas, glace cherries, almonds, and cornflakes in a bowl. Pour in the milk and stir until fully mixed. Spoon 2 teaspoons of the mixture onto baking trays, spacing them 6cm apart. Bake one tray at a time for about 5 minutes until golden. Allow to cool on the trays before serving.
  • In a heatproof, microwave-safe bowl, add the chocolate. Microwave on MEDIUM (50%) power for 1 minute, making sure to stir after 30 seconds with a metal spoon until the chocolate is melted and smooth. Spread the melted chocolate over the base of the florentines using a palette knife or spatula. Place the florentines chocolate-side up on a wire rack and let them sit until the chocolate has set. Serve and enjoy!
