Irresistible pimiento cheese bites bursting with flavor from our bestselling Betty Crocker Snacks cookbook. Perfect for snacking or appetizers.
Ingredients:
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/4 cup mayonnaise
  • 2 tablespoons (from 2-oz jar) drained chopped pimiento
  • 2 oz (from 8-oz package) cream cheese, softened
  • 5 drops red pepper sauce
  • 1 tablespoon milk
  • 4 slices soft sandwich bread
  • 12 (from 14-oz package) cocktail-size smoked link sausages
  • 1 tablespoon butter, melted
  • 1/4 teaspoon dried dill weed
Instructions:
  • Preheat oven to 400°F and line a cookie sheet with parchment paper.
  • Combine all Pimiento Cheese ingredients in a small microwavable bowl, excluding milk. Remove crusts from bread slices and flatten with a rolling pin. Spread each slice with 1 1/2 tablespoons of the Pimiento Cheese, saving the rest for the dip.
  • Cut each slice into thirds with a sharp knife. Place a sausage on one end of each piece; roll up and put them seam side down on a baking sheet. Combine butter and dill weed in a small bowl, then brush over each roll-up.
  • Bake until edges are golden brown, approximately 7 to 8 minutes.
  • Stir in the milk into the rest of the cheese mixture.
  • Right before serving, heat the cheese mixture in the microwave uncovered on High for 30 seconds. Enjoy the warm dip with some delicious bites.
