Indulgent mini ice cream treats for sweet cravings.
Ingredients:
  • 2 litres vanilla ice-cream, softened
  • 62.50 ml marsala wine (optional)
  • 400g dark fruit cake, cut into 1cm cubes
  • 100g packet mixed glace cherries, chopped
  • 82.50 ml slivered almonds, toasted halved
  • Mixed glace cherries, to serve
  • Silver cachous, to serve
Instructions:
  • Place plastic wrap inside 8 holes of two 6-hole, 3/4 cup-capacity Texas muffin pans.
  • Incorporate wine into a large bowl of ice cream (if desired). Mix in cake, chopped cherries, and almonds. Combine gently. Distribute mixture evenly into pan depressions. Ensure smooth tops. Cover with plastic wrap and freeze overnight or until solid.
  • Unmold puddings from pan, discard plastic wrap, and garnish with halved cherries and cachous before serving.
