Keto-friendly pancake bites with cottage cheese, almond meal, and eggs. Topped with strawberries and pistachios for a delicious and adorable treat.
Ingredients:
  • 200g tub Cottage Cheese, plus 200g extra, to serve
  • 2 eggs, lightly whisked
  • 4.40 gm vanilla extract
  • 100g (1 cup) almond meal
  • 4.00 gm baking powder
  • 1 lemon, rind finely grated
  • 21.00 gm fresh lemon juice
  • 200g fresh strawberries, hulled, coarsely chopped
  • 25g (¼ cup) chopped pistachio kernels
Instructions:
  • In a large bowl, combine cottage cheese, eggs, and vanilla, whisk until smooth.
  • Mix almond meal and baking powder in a bowl, then add the cottage cheese mixture and stir until well combined.
  • Warm oil in a spacious non-stick pan over gentle heat. Spoon heaping teaspoonfuls of the mixture onto the pan and cook for 11/2-2 minutes. Flip and cook for an additional 30-60 seconds.
  • Mix together the additional cottage cheese, lemon zest and juice, fresh strawberries, and chopped pistachios in a bowl.
  • Accompany the pancakes with a delectable side of cottage cheese mixture.
