Mini lime muffins with smoked salmon

Elevate your dish with gourmet smoked salmon and zesty citrus flavors.
Ingredients:
  • 2 eggs
  • 60ml olive oil
  • 125g yoghurt
  • 375ml milk
  • Rind of 1 lime, finely grated
  • 375g self-raising flour
  • Pinch of salt
  • 118.80 gm (1/2 cup) Mayonnaise
  • 23.40 gm grated horseradish
  • 400g smoked salmon
  • Mustard cress or alfalfa, to serve
  • Salmon roe, to serve
Instructions:
  • Preheat your oven to 180°C and lightly grease two 24-cup mini muffin trays.
  • Combine the eggs, oil, yogurt, milk, and lime zest in a bowl and whisk until smooth.
  • In a large bowl, sift the flour and salt together. Create a well in the center and pour the mixture in. Gently mix until just combined. Spoon the batter into trays and bake for 10-12 minutes until golden and cooked through. Let the muffins sit in the trays for 5 minutes, then transfer to a wire rack to cool.
  • With a sharp knife, create a flat surface on the top of each muffin by cutting a small slice off.
  • Combine mayonnaise and horseradish in a small bowl. Top each muffin with smoked salmon, a dollop of the mayo mixture, mustard cress, and salmon roe. Serve.
