Impress guests with quick and delicious mini muffulettas, featuring veggies, cheese, ham, and salami. Ready in just 25 minutes!
Ingredients:
  • 2 jars (16 oz each) giardiniera vegetable mix, drained
  • 3/4 cup pimiento-stuffed green olives, chopped
  • 2 tablespoons olive oil-and-vinegar dressing
  • 12 small dinner rolls, split
  • 6 slices Swiss cheese, cut in half
  • 12 thin slices deli ham
  • 12 slices Genoa salami
  • 6 slices provolone cheese, cut in half
Instructions:
  • Place the vegetable mix in a food processor and pulse 8 to 10 times until finely chopped. Mix in the olives and dressing.
  • Spread a generous tablespoon of the vegetable mixture on each roll bottom. Layer with a half slice of Swiss cheese, a slice of ham, a slice of salami, and a half slice of provolone cheese. Top with the roll tops and enjoy right away, or wrap in plastic and refrigerate until ready to serve.
