Indulgent mini peanut butter cheesecakes, perfect for parties, made effortlessly in a muffin pan.
Ingredients:
  • 0.66666668653488 cup graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons white sugar
  • 1 (8 ounce) package cream cheese, softened
  • 0.33333334326744 cup peanut butter
  • 0.33333334326744 cup brown sugar
  • 1 large egg
  • 0.25 cup heavy cream
  • 0.25 teaspoon vanilla extract
  • 0.33333334326744 cup crushed peanut butter cups (such as Reese's®)
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a bowl, mix graham cracker crumbs, melted butter, and sugar to make the crust. Divide the mixture evenly among 6 cups of a 12-cup muffin tin. Press down the crust in each cup using a spoon. Set aside.
  • Combine cream cheese and peanut butter in a bowl, using an electric mixer until smooth. Blend in brown sugar, then add egg and mix well. Stir in cream and vanilla. Divide batter onto crusts and sprinkle crushed peanut butter cups on top.
  • Bake in the preheated oven for 12 to 15 minutes until set. Let cool at room temperature for about 1 hour, then refrigerate for 4 hours to overnight until completely chilled.
