Ingredients:
  • 8 slices wholemeal bread, crusts removed
  • 20g butter, softened
  • 4 green onions, ends trimmed, thinly sliced
  • 8 slices shaved ham
  • 35g cheddar cheese
  • 6 eggs, lightly whisked
Instructions:
  • Preheat the oven to 160°C. Brush 8 muffin holes with melted butter. Roll out bread slices to 3mm thick using a rolling pin. Cut bread into discs using a 12cm-diameter pastry cutter. Lightly butter each slice of bread and place in the muffin holes.
  • Evenly distribute green onions, ham, and cheese in each muffin hole, then pour egg over the top. Bake until golden brown and set, about 15 minutes. Chill in the fridge and store in airtight containers.
