Create flavorful mini quiches perfect for brunch or appetizers.
Ingredients:
  • 1 1/4 cups Original Bisquick™ mix
  • 1/4 cup butter or margarine, softened
  • 2 tablespoons boiling water
  • 6 slices bacon, crisply cooked, crumbled
  • 1/2 cup half-and-half
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/2 cup shredded Swiss cheese (2 oz)
Instructions:
  • Preheat your oven to 375°F. Grease 24 mini muffin cups (1 3/4x1-inch) generously with shortening or cooking spray.
  • Combine Bisquick mix and butter in a small bowl until well blended. Add boiling water and stir vigorously until a soft dough forms. Press rounded teaspoonfuls of dough onto the bottom and up the sides of each muffin cup and evenly distribute the bacon among the cups.
  • In a small bowl, whisk together half-and-half and egg until smooth. Mix in onions, salt, and red pepper. Spoon 1 1/2 teaspoons of the egg mixture into each muffin cup and top with cheese.
  • Bake for approximately 20 minutes until the edges turn a beautiful golden brown and the centers are fully set. Any leftover appetizers should be covered and refrigerated.
