Ingredients:
  • 1 pkt frozen puff pastry, thawed
  • 10 - 12 eggs
  • 257.50 gm milk or cream
  • Salt & pepper, to taste
  • 1 - 20.00 ml parsley, chopped
  • 250.00 ml bacon or ham, cooked, diced
  • 500.00 ml cheddar cheese, grated
  • 82.50 ml spring onions, sliced
  • 1/3 cup champion mushrooms
  • 82.50 ml corn kernels
Instructions:
  • Preheat your oven to 190C and generously grease two 12-hole small muffin or cupcake tins with cooking spray.
  • Beat eggs, milk, salt, pepper, and parsley in a large jug until well combined. Set aside.
  • Cut out 24 circles of pastry using a round cookie cutter or a glass. Gently press the pastry circles into the cake tins using your fingers.
  • Sprinkle a layer of your favorite combinations of bacon, cheese, and other ingredients into each pastry shell. Be sure not to overfill, just a few pieces in each. Pour in enough of the egg mixture to fill each pastry shell about 3/4 full.
  • Bake in the oven for 12 minutes or until beautifully puffed and golden on top. Enjoy hot, cold, or freeze for up to 2 months. When reheating, simply place in a single layer in a moderate oven until hot and crispy again.
