Mini tuna and salad subs

Ingredients:
  • 100g can light tuna (with tomato and onion), drained
  • 20.00 ml frozen corn kernels
  • 10.00 gm low-fat mayonnaise
  • 2 dinner rolls
  • 40.00 ml grated light tasty cheese
  • 62.50 ml shredded iceberg lettuce
  • 1/2 small carrot, grated
  • 2 grape tomatoes, cut into quarters
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced. Mix tuna, corn, and mayonnaise in a bowl. Put rolls on a baking tray and slice them in half lengthways, keeping one side intact.
  • Divide the tuna mixture evenly between the rolls and gently press down. Sprinkle with cheese and bake for 5 to 6 minutes until the rolls are golden and the cheese is melted. Allow to cool for 2 minutes. Top with lettuce, carrot, and tomato, then serve.
