Fun and festive mini waffle pops on sticks, baked and adorned with white chocolate and sprinkles.
Ingredients:
  • 1.75 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 1.5 cups milk
  • 3 eggs, beaten
  • 0.5 cup butter, melted
  • 1 teaspoon vanilla extract
  • 60 lollipop sticks
  • 1 (12 ounce) package white chocolate chips
  • 0.5 cup candy sprinkles
  • 0.25 cup colored sugar
Instructions:
  • Prepare the waffle iron by greasing it with cooking spray and preheating as directed.
  • In a large bowl, combine flour, sugar, baking powder, and salt, whisk together until well mixed.
  • Combine milk, beaten eggs, melted butter, and aromatic vanilla extract in a separate bowl. Pour over the flour mixture and gently stir until the batter is just combined.
  • Place 2 teaspoons of batter into the waffle iron for each waffle pop, ensuring space between each. Insert a lollipop stick 3/4 of the way into the batter. Cook until golden and crispy, approximately 1 minute. Transfer to a cooling rack and continue with the rest of the batter and sticks.
  • Melt white chocolate in a microwave-safe glass or ceramic bowl by heating in 15-second intervals, stirring regularly, for 1 to 3 minutes.
  • Transfer the melted chocolate into a pastry bag with a small writing tip or a plastic resealable bag with a corner snipped off. Drizzle the chocolate over one side of the waffle pops.
  • Decorate pops with vibrant candy sprinkles and colorful sugar while the warm chocolate provides the perfect canvas. Allow them to cool until the chocolate sets, approximately 5 minutes.
