Mini waffle pops on sticks with dark chocolate, roasted peanuts, and flaked salt for a fun and festive dessert.
Ingredients:
  • 1.75 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 1.5 cups milk
  • 0.5 cup butter, melted
  • 1 (12 ounce) bag dark chocolate chips
  • 60 lollipop sticks
  • 0.5 cup chopped roasted peanuts
  • 1 tablespoon flaked sea salt
Instructions:
  • Prepare the waffle iron by generously spraying it with cooking spray, then preheat as directed by the manufacturer.
  • Combine flour, sugar, baking powder, and 1/2 teaspoon of salt in a large bowl and whisk until fully mixed.
  • Combine milk, beaten eggs, melted butter, and vanilla extract in a separate bowl, whisk until smooth. Pour over the flour mixture and stir until just combined.
  • Place 2 teaspoons of batter into the waffle iron for each waffle pop, ensuring they are spaced apart. Insert a lollipop stick into each pool of batter most of the way. Close the lid and cook until golden and crispy, around 1 minute. Move the waffle pop to a cooling rack and continue with the rest of the batter and sticks.
  • Melt dark chocolate in the microwave-safe bowl, heating in 15-second intervals, stirring each time, for 1 to 3 minutes.
  • Transfer the melted chocolate into a pastry bag with a small writing tip or a resealable plastic bag with a corner snipped off and drizzle it over one side of the waffle pops.
  • Sprinkle peanuts and a pinch of flaked salt over pops while chocolate is still warm. Allow to cool until chocolate firms up, approximately 5 minutes.
